MAP, what’s in a name?
MAP stands for Modified Atmosphere Packaging or gas packaging. The air in the packaging is replaced by a mixture of nitrogen (N2) and carbon dioxide (CO2). You then inhibit the chemical, enzymatic, and microbiological reactions and counteract the growth of common bacteria and fungi. With fresh/unprepared/raw meat products, oxygen is often added during the MAP process to preserve the color. The exact gas composition depends on your product and takes account of its properties such as the Aw value or water activity in the product, pH, temperature, quality of the raw material, additives, as well as the barrier properties of the packaging and foil.
