indian institute of packaging iip is developing a new packaging technology for tender coconut water to enhance its shelf life while also retaining the natural flavour. &ldquocurrently, there are many technologies such as thermal process under which coconut water is heated but its original flavour gets altered,&rdquo according to iip director dr n.c. saha. he said the project has been taken up in collaboration with iit bombay and sponsored by the ministry of food processing. the packaging technology will help retain the natural flavour and texture. the shelf life will be about 28 days with the iip technology use and the cost would be about rs 10 only for 200 ml. the idea behind the project is to serve cocount water to consumer in a best way from coastal areas like kerala, where huge number of coconuts are produced.
